Every since I visited Mojo No.4 for lunch I cannot get their butter bean hummus out of my head! So smooth, so tasty, SOOOO addicting, so superior to chickpea hummus in every way. I must have it, NOW! This recipe is suuuper easy and it would make a great party appetizer or...ya know, dinner for some people, because they ate the entire thing...in one sitting...a WHOLE can of beans. Oi.
Butter Bean Hummus Dip
1 (15oz) can of butter beans, drained
3 TBS olive oil
3 tsp cumin
2 tsp chili powder
1 tsp minced garlic, fresh
1/2 onion powder
salt and white pepper to taste
pita chips (I used Amy's multigrain)
Directions:
1.Place all the ingredients in a food processor fitted with blade and pulse until combined and smooth (may need to add some extra olive oil)
2.Taste and adjust
