Simple and Tasty Pizza/Pasta Sauce
I am adamant when it comes to making your own sauce. The sauce is the glue that holds your dish together, Fernand Point once said, "It is the sauce that distinguishes a good chef. The Saucier is a soloist in the orchestra of a great kitchen." If your sauce tastes like metal cans than your dish is probably gonna suck. It takes a little extra effort and time, but believe me, it's worth it! I made this sauce initially for my pizza, but since I had leftovers, I decided to try it on some pasta the next day and it worked! After all, they contain the same basic flavors, why not utilize it for two dishes?
Homemade Pasta/Pizza Sauce
makes about 5 cups
1lb 12oz. can of peeled tomatoes (I prefer the brand above OR Pomi)
1/2 an onion, diced
1 TBS olive oil
1/4 cup red wine
2 tsps fresh crushed garlic
2 tsps sugar
1 TBS dried oregano
1/2 tsp garlic powder
4-5 fresh basil leaves OR 1 TBS dried
1/4 cup grated Parmesan cheese
salt and pepper to taste
Directions:
1.In a large pan, add olive oil and onions and cook on medium heat until onions are soft and translucent. Add garlic and cook for another 2 min. Deglaze with red wine and let some of the alcohol burn off (about 2-3 min).
2.Add tomatoes, oregano, basil, powdered garlic, sugar, and emulsify with an immersion blender until smooth. Simmer on medium low heat for about 10 minutes.
3.Taste and adjust flavors accordingly. Add parm cheese last and serve over pasta or on a pizza crust.
