Gosh, it pays to have a honey hook-up. We were recently given a bounty of fresh, local honey so I had to make something that pays homage to this amazing ingredient - enter, this bomb honey cake! I stumbled upon this recipe on Pinterest from The Meditteranean Dish and when I saw the glistening almonds and pistachios, I knew I was in for a treat and it did not disappoint.
This cake is truly unique because it contains semolina flour which gives it a slightly more grainy texture which is perfect for soaking up all that honey goodness. The orange and lemon really brighten up the flavors and the acidity balances out the sweetness. It truly is the PERFECT cake for Spring and I am already exploring more Mediterranean desserts.
