Cheddar Biscuit Chicken Pot Pie
Fall is in full swing here in Oregon. The leaves have fallen and the rain has returned which I do not mind one bit. I always love that everyday cozy comforts are always more appreciated during this time of year, whether it's a hot cup of coffee or a rich and indulgent meal that will warm your bones! Chicken pot pie has always been one of those meals for me - a buttery crust filled with meat and veggies smothered in cream sauce, what's not to like?
This time, I didn't really feel like bothering with a crust so I decided to go the biscuit route instead! You can still roll out this dough and precisely cut each biscuit individually orrrr you can be like me and do a quick kneed of the dough in the mixing bowl and use a spoon to blop some dough over the filling. I also added a bit of cheese into the mix but feel free to switch it up with chives, herbs, or go crazy and throw some bacon in there too!
